Bison is a meat product perfect for todays health-conscious consumers. The rich, sweet flavor betrays the fact that this meat is so lean and virtually fat-free, with less calories and cholesterol than beef,

chicken, pork and turkey!

  • For our 1/4, 1/2 and Whole Bison option we charge per hanging weight lb plus processing. The hanging weight for a 1/4 is around 150-200 lbs, 1/2 around 300-400 lbs and whole 650-720 lbs. You will get around 72-75 % "take home" meat from the hanging weight. The animal cost is  $5.30 per hanging weight lb and processing it’s $1.00 per hanging weight lb plus kill fee. Kill fee cost is 1/4-$50, 1/2-$100 and whole-$200. After cost of animal and processing the total ends up being around 9.60/lb. That’s for everything- filet, ribeye, etc.

    Processing is done at The Meat Hook in Polk, NE. You choose all your own cuts that you would like. The locker hangs the animal for 2 weeks so it is dry aged. The Meat Hook is our very popular local locker and is very well known for their "knife" cutting (not saw cutting) so you get back as much meat as possible. With bison you will get back around 72-75% meat back depending on what you get cut. You also have the option to the bones, liver, heart, etc. This is a pick up option only. This option cannot be shipped. The locker will contact you when the meat is ready to be picked up.

    When you compare this option with bison vs. beef is your "take home" meat percentage is much higher with bison because there is not a "fat cap" on bison like there is beef, so therefore you have a significantly higher meat return and less throw away.
